Schleif Photography Born and raised in England, United Kingdom, Iby Nemati came to Minnesota State University Moorhead to study as an exchange student. The one thing he was not prepared for was our weather, and meeting the woman he had always dreamed of, his wife Michelle. In his words, the rest is history. After studying in the States for some time, Michelle became an exchange student in Portsmouth, England, where the couple later married in a small village in an 800-year-old church, before returning to the United States in 2015. COOKING COMES FROM FAMILYIby started a career in banking and the mortgage industry after returning to the States. He made many wonderful connections while being a mortgage lender, but his passion for food was calling him back to his roots. He recalls fond memories from the kitchen growing up helping with the family baking in England; helping bake scones, cakes and other various desserts for Christmas and Easter. Driven by these memories, Iby followed his calling and started Windsor Waffles. This came after many hours in his kitchen trying various toppings and realizing what worked and what did not HOW DID WINDSOR WAFFLES FORM? Iby recalls living in England as a child and having a similar treat on a stick covered in sugar and fresh squeezed lemon. While that was sweet and amazing, he wanted to take it the next level and spice things up a bit. Windsor Waffles is an event-based catering company you may have seen at local events such as the Red River Market, Folkways Christkindlmarkt and many other events. They are also available at weddings, graduations, birthdays and any event where you may want a sweet treat on a stick! After all, this is the Midwest, and who doesn’t like any food on a stick? A “Windsor Waffle” is a British waffle on a stick, with a wide variety of toppings available. It can be anything from peanut butter, Nutella, caramel, M&Ms, powdered sugar and whatever other sweet treats your imagination can think of! "With taste testing from our family and friends, we decided on what we have today and made it our own twist on a gourmet waffle. We used a lot of British flavors and flare, but also added things I love from the United States” - Iby Nemati THE START OF EXPANDING IN 201Life as we knew it was “normal” when the idea was coming alive. The initial plan was to be at Fargo events like the standard street fairs, local markets, parties and other large get togethers. As we know, 2020 started as a normal year for a few months until the COVID-19 pandemic really set in. After seeing what was going on in the world, Iby changed the business plan and started to focus on corporate events. While many public events slowed down as we dealt with uncharted territory, weddings, birthdays and graduations continued on with strict safety precautions in place. This allowed Windsor Waffles to keep moving forward while adapting and curing one sweet tooth at a time. While smaller private events are always fun, Windsor Waffles in excited to return to local public events to see familiar faces and satisfy the Midwestern food-on-a-stick desire!
